trim wheel contents; fix test_jax for upstream Faust; correct Python metadata

- MANIFEST.in: prune faustlibraries doc/, tests/, .github/, and modalmodels/
  (mesh2faust CAD sources referenced only in physmodels.lib comments), and
  Python bytecode caches
- setup.py: fix copytree so directory names can be ignored, and stop copying
  app-project scaffolding (AU, android, httpdlib, iOS, osclib, smartKeyboard,
  unsupported-arch) into dawdreamer/architecture; none of these are usable as
  -a architecture wrapper files
- setup.py: classifiers and python_requires now say 3.11-3.14
- tests/test_jax.py: target the flax.linen module that upstream Faust 2.85.9
  generates via -a jax/minimal.py (the nnx variant only exists in a fork)
