fix(client): prevent post-save field flicker and submit canonical option values

freeze form defaults on mount, reset server values with keepdefaultvalues,
and rebase defaults after save so tanstack form stops reverting untouched
fields to stale snapshots; key wizards by entity id, show loading states
during option fetches, and submit stable option values instead of labels.
