Increment version and update release workflow

This commit increments the version in `version.txt` from `1.0.0` to `1.0.1`.

It also updates the `.github/workflows/release.yml` file to change the uploaded APK filename in the release step from `app-release.apk` to `app-release-unsigned.apk`.
