refactor: rename apiKey/apiSecret to clientId/clientSecret

Aligns env var names (SHOPIFY_CLIENT_ID/SHOPIFY_CLIENT_SECRET) and
internal TypeScript property names with OAuth client_credentials
terminology for consistency.
