docs(roadmap): plan session history feature

Adds a fully-specified planned feature for explicit start/stop recording
sessions with an in-app History viewer (egui_plot charts, pinning,
rename/delete), building on the existing stats-logging CSV pipeline.
No implementation yet - tracked in #175.
