release: v0.1.1 (#3)

First PyPI release via OIDC trusted publishing. v0.1.0 was a GitHub-only initial
release that predated the publish workflow, so the first published artifact is
0.1.1. Bumps version in pyproject.toml + sensorwatch/__init__.py and refreshes
uv.lock.
