docs: ROADMAP — LEO-341 Phase 1 pilot underway; examples + skill-update ETA (#31)

Note in the Phase 2 staged-runtimes section that the LEO-340 Windows wiring (supervisor + dead-man's switch) has landed and the LEO-341 Phase 1 pilot is now running on real hardware — described generically (CPU and PSU model named; GPUs referenced only as GPU temperatures). Add an ETA: worked examples and sensorwatch-monitor skill refinements expected in this repo in mid-July 2026, after the pilot and its wrap-up. Bump the Last-updated date.
