Rename scrollbar_thumb to be consistent with other style properties (#8004)

This small inconsistency was mentioned on the discord. This fixes it.

Release Notes:

- Themes: Renamed `scrollbar_thumb.background` to
`scrollbar.thumb.background` to be consistent with other style
properties.
