feat(zkgm): more fao v1/v2 compat tests (#4684)

## New Tests Added
- **Mixed V1/V2 batches** - Both order types in same transaction
- **Cross-version tokens** - Same base token, different metadata =
different
wrapped tokens
- **V1→V2 upgrades** - V2 can unwrap V1 tokens using compatibility mode
- **Balance isolation** - V1 and V2 track outstanding balances
separately
- **V2 timeouts** - Proper refunds and balance cleanup for V2 orders
- **Unwrap validation** - Rejects invalid baseAmount < quoteAmount
