docs: update docs with knowledge gained form union testnet deployment

Minor updates to both `docs/docs/nodes-validators/running-uniond.md` and
`docs/docs/nodes-validators/create-testnet-genesis.md`. Updates include
information gained from the launch of the union testnet.
