Default to reasoning ON (it is a reasoning model): native template + --reasoning-parser glm45

Thinking now streams into message.reasoning by default; ENABLE_THINKING=0 reverts to
snappy direct answers. chat.sh always surfaces the thinking. Updated README/compose.
