Groundwork for packet explorer and cross-chain swap (#2771)

This PR includes a lot of refactors that are required to build a full
packet explorer and for implementing cross-chain swaps, powered by
Abstract. It also lays the groundwork for both of these features.

The refactors significantly reduce code duplication, and improve
consistency throughout the app by re-using components where possible. It
also makes heavy use of GraphQL fragments to increase type safety.

This intermediate state is being merged in order to avoid merge
conflicts later on, as it shuffles a bunch of components around
