feat: update to cosmos-sdk v0.50.5 (#1633)

All tests pass on unionlabs/cosmos-sdk, tested local devnet to ensure
block production after the upgrade.

Also fixes our OpenAPI file

Closes #1623 (mostly)
Not going to bother with removing circuits and nft modules for this PR
